Servings: Makes enough of a side dish for 4-6 people
Ingredients
  • 200 to 300g (7 to 10½oz) carrots
  • 125g (4oz) unsalted or salted butter
  • 25g (1 oz) sugar
  • 200g (7fl oz) water
  • good sea salt
Steps
  1. Put it all in a heavy frying pan on med/high heat.
  2. When the bubbling liquid starts to sing--make noticeable noise--reduce the heat.
  3. Continue until most of the liquid is gone, turning the carrots to keep them from burning.
