Servings: Makes enough of a side dish for 4-6 people
- 200 to 300g (7 to 10½oz) carrots
- 125g (4oz) unsalted or salted butter
- 25g (1 oz) sugar
- 200g (7fl oz) water
- good sea salt
- Put it all in a heavy frying pan on med/high heat.
- When the bubbling liquid starts to sing--make noticeable noise--reduce the heat.
- Continue until most of the liquid is gone, turning the carrots to keep them from burning.
