Pumpkin Gingerbread Muffins {Healthy & Moist}
Ingredients
  • ¾ cup all-purpose flour
  • ¾ cup white whole wheat flour or additional all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 ½ teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 cup pure pumpkin puree not pumpkin pie filling
  • ½ cup pure maple syrup
  • ½ cup unsulphured molasses do not use blackstrap; it will be too bitter
  • ¼ cup Land O Lakes® Unsalted Butter in Half-Sticks melted and cooled to room temperature
  • 2 large eggs at room temperature
  • 2 tablespoons coarse sparkling sugar or turbinado sugar
