Chicken Sweet Potato Curry

Wife and mom of 3. Love my Instant Pot. Gluten free

This was good, but really soupy. Maybe because they only used a bag of frozen sweet potato cubes (and probably only a 10 oz bag) ?

2 tablespoons olive oil

2 tablespoons butter

1.5 lb (680 g) boneless skinless chicken thighs , cut to bite-size pieces (*Footnote 1)

1 white onion , minced

4 garlic cloves , minced

1 thumb ginger , minced

3 tablespoons curry powder

1 teaspoon cumin powder

1 teaspoon black pepper

1 teaspoon paprika

½ teaspoon turmeric powder (Optional, *Footnote 2)

2 cups chicken broth

2 small or 1 big (1 lb / 450 g) sweet potatoes , cut into 1” (2.5 cm) pieces

1 can (15 oz / 425 g) garbanzo beans (aka chickpeas) , drained

½ teaspoon salt

1 can (13.5 oz / 400 ml) full-fat unsweetened coconut milk (*Footnote 3)

½ cup cilantro , chopped
