Ingredients
- 5 chicken leg quarters, cut down into legs and thighs
- ¼ cup yellow mustard
- 2 tablespoons McCormick Smokehouse Maple seasoning
- Black pepper
- Slap Ya Mama Cajun seasoning
Steps
- Put chicken in a gallon Ziploc bag.
- Add Smokehouse Maple seasoning, then black pepper & Cajun seasoning to taste.
- Close the ziplock bag and toss it so all the chicken gets coated.
- Marinate for 4 to 6 hours in fridge, overnight if you can.
- Smoke for an hour over indirect heat of a wood fire.
- Put in a large metal bowl and toss with butter.
- Put it back over indirect heat of wood fire for another hour.
Notes
- We don't use charcoal. Just untreated firewood.
