Double Chocolate Thin Mint Ice Cream (Dairy-Free)
Ingredients
  • 1 13.5-ounce can full-fat  coconut milk
  • 1 13.5-ounce can coconut cream
  • ½ cup plus 2 tablespoons maple syrup ( honey will work too)
  • ¼ cup cocoa powder (preferably Dutch-processed, but natural or raw cacao will work too)
  • ¼ teaspoon sea salt
  • 1 tablespoon coconut oil
  • 1 teaspoon peppermint extract
  • 4 large egg yolks
  • 4 ounces unsweetened chocolate bar, chopped
  • subheading: Swirl:
  • 1 cup dark chocolate chips
  • 2 teaspoons coconut oil
  • ¼ teaspoon peppermint extract
  • 5 Mint Slim cookies ( Eat What You Love pg 283), chopped*
