  • ¼ cup chopped scallion, plus more for garnish
  • 1 teaspoon sugar (optional)
  • 2 tablespoons soy sauce
  • Salt and freshly ground black pepper
  • ¼ cup chicken or vegetable stock, white wine, or water
  • 1 tablespoon dark sesame oil
