Ingredients
- 1 Small or ½ of a large cabbage
- 1 medium yellow or sweet onion
- 1 stick salted butter - melted
- 1 teaspoon of salt
- ½ to 1 teaspoon of freshly ground black pepper
- 1 (10 oz) can cream of chicken soup
- ½ cup of good mayonnaise (I prefer Duke's)
- 1 sleeve of Ritz crackers - or some other buttery cracker
- 1 stick salted butter - melted
- 1 cup grated medium or sharp Cheddar cheese
Steps
- Preheat your oven to 350° F.
- Coarsely chop your cabbage, and place in a 3-quart casserole dish.
- Chop your onion (not diced). Place this on top of the cabbage in the dish.
- Pour your melted butter over the top.
- Add salt and pepper to taste.
- In a separate small bowl, mix the cream chicken soup, and your mayonnaise. Spread this mixture on top of the cabbage mixture.
- For the topping, crush the crackers but NOT fine. Mix the crushed crackers with the second stick of melted butter and grated cheese.
- Spread this over the top of the casserole. NOTE: Use can use white cheddar cheese or yellow.
- Bake of 45 minutes or until the top is browned and inside is bubbly.
- Sprinkle a small amount of chopped Chives, or Green Scallions on top.
Notes
- NOTE: In place of buttery crackers you can use some Fried Onions - - but I find this too oniony.
