Sheet Pan Zhong-Glazed Salmon
Ingredients
  • subheading: Zhong Sauce (makes 2 ½ cups):
  • 1 cup / 240ml neutral oil
  • 1⁄2 cup / 100g minced garlic
  • 1⁄3 cup / 50g Ground Chili Powder
  • 2 Tbsp toasted sesame oil
  • 1 cup / 240ml Sichuan Sweet Soy Sauce (recipe follows)
  • subheading: Sichuan Sweet Soy Sauce (makes 3 cups):
  • 2 cups / 480ml light soy sauce
  • 2 cups / 400g dark brown sugar, lightly packed
  • 2 cardamom pods
  • 1 or 2 pieces star anise
  • 1 piece cassia bark
  • 1 (1-inch / 2.5cm) slice ginger
  • 1 tsp fennel seeds
  • 1 bay leaf
  • 1 tsp whole Sichuan pepper
  • subheading: Sheet Pan Zhong-Glazed Salmon:
  • 1⁄4 cup / 60ml Zhong Sauce
  • 1 Tbsp honey
  • 1⁄4 cup / 60ml lemon juice
  • 2 Tbsp minced garlic
  • 1 tsp kosher salt
  • 1 lb / 450g brussels sprouts, halved
  • 4 (8-oz / 225g) salmon fillets
  • White rice for serving (optional)
