- 1 piece cassia bark
- 1 (1-inch / 2.5cm) slice ginger
- 1 tsp fennel seeds
- 1 bay leaf
- 1 tsp whole Sichuan pepper

- 1⁄4 cup / 60ml Zhong Sauce
- 1 Tbsp honey
- 1⁄4 cup / 60ml lemon juice
- 2 Tbsp minced garlic
- 1 tsp kosher salt
- 1 lb / 450g brussels sprouts, halved
- 4 (8-oz / 225g) salmon fillets
- White rice for serving (optional)
