Slow Cooker Chipotle Chicken & Poblano Street Tacos
Ingredients
  • 4 chicken thighs (2 to 2 ½ lbs), skins removed & fat trimmed
  • Salt & pepper
  • 1 tbsp olive oil
  • 2 large poblano peppers (tops cut off, seeds removed, and cut into thin strips lengthwise)
  • 1 large onion, thinly sliced
  • ¼ cup tequila
  • 2 tbsp brown sugar
  • 1 clove garlic, minced
  • Juice from 1 fresh lime
  • 1 chipotle pepper (from a can of chipotles in adodo sauce), chopped 2 tbsp of the adobo sauce
  • ½ tsp ground cumin
  • ¼ tsp dried oregano
  • ¼ tsp ground cinnamon
  • 1 tsp salt
  • 2 bay leaves
  • Corn tortillas
  • Sargento 4 Cheese Mexican Blend Shredded Cheese (about 1 tbsp per taco)
  • Fresh lime wedges
  • Fresh cilantro
  • Any other taco toppings that you like (guacamole, salsa, sour cream, etc.)
