Pork Enchilada
Ingredients
  • 1 lb cubed pork tenderloin
  • 1 onion diced
  • 3 cloves garlic
  • 1 can red enchilada sauce
  • 2 cans white hominy
  • 8 cups of water
  • Bouillion per recommendation on package
  • 1 tablespoon oregano
Steps
  1. Add everything to the crockpot except hominy (I add it last bc it gets mushy but you can add it whenever you want if you dont care). Cook on low 4 hours. Add hominy last 30 min
  2. Freezes really well and is pretty cheap to make. My local store has pork tenderloin on sale for 1.99 a lb
