Potato, Leek, and Roasted Garlic Soup
Good flavor but not a home run. Others liked it better than I did, maybe because I know there is mayo in it so that is what is the predominant flavor for me.
Ingredients
  • 3 small garlic heads
  • 1 Tbsp. olive oil
  • 1 ½ tsp. kosher salt
  • 2 Tbsp. unsalted butter
  • 3 medium leeks, trimmed, washed, and thinly sliced (3 cups)
  • 3 large Yukon Gold potatoes, peeled and chopped (3 cups)
  • 6 cups chicken broth
  • ½ cup mayonnaise (such as Duke’s)
  • Freshly ground black pepper, fresh thyme leaves, and croutons, for topping
