Taco Soup

Ingredients
  • 1 lb lean ground beef
  • 2 cups of water
  • 1 15 oz can of black beans, rinsed and drained
  • 1 14.5 oz can of Mexican-style stewed tomatoes, un-drained and cut up
  • 1 10.75 oz can of fiesta nacho cheese soup
  • Optional - broken tortilla chips
Steps
  1. In a large saucepan, cook ground beef until brown, breaking up meat as it cooks.  Drain off fat.
  2. Stir in water, beans, un-drained tomatoes, and cheese soup.  If necessary, use a whisk to stir mixture until smooth.  Bring to boiling then reduce heat to a simmer.  Simmer for 10 minutes.
  3. Ladle into bowls and top with tortilla chips, if desired.
Notes
  • To make vegetarian, replace ground beef with 16 oz can of refried beans.
