Healthy Mini Cheesecakes

  • Cheesecake lovers... try these Healthy Mini Cheesecakes!
  •  
  • 2, (8 oz.) packages of ⅓ less fat cream cheese
  • 2 eggs
  • ½ tsp vanilla
  • Mix until super smooth and creamy. Bake in muffin tin at 350 for 15 min. Don't over bake please! Remove from tray and let cool for just a few min. Mix the following really well.

  • 1 cup plain Greek yogurt
  • 3 Tbs. Gentle Sweet
  • Dollop on top and chill until cool and firm. Top with whatever you wish, we used toasted coconut or sugar free fruit syrup. Inhale.
  • Yields 1 dozen
