No Meat Meatballs
Ingredients
  • ¼ cup chopped leeks
  • ½ cup chopped red onion
  • 3 cloves garlic
  • 2 cups finely diced mushrooms
  • 1 cup cooked brown rice
  • ½ cup mashed potato
  • ½ cup chopped pecans
  • ¼ tsp dried rosemary
  • 1 tbsp fresh parsley
  • Pinch dried thyme
  • 1 tbsp tomato paste
Steps
  1. Preheat oven to 350
  2. Saute leek and onion.
  3. Add garlic and cook
  4. Add mushrooms and cook til soft
  5. Transfer to mixing bowl.
  6. Add rice, mash, pecans, herbs, tomato paste and mix.
  7. Press tightly into balls.
  8. Bake for about 30 min
