Pinto Bean Burritos

  • 1 ½ cup green, red, or yellow bell pepper strips
  • 1 cup chopped red onion
  • 1 fresh poblano pepper, seeded and chopped
  • 2 cloves garlic, minced
  • 2 15 ounce cans pinto beans, rinsed and drained
  • 1 tablespoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon black pepper
  • 6 10 inch flour tortillas
  • 1 cup shredded cheddar cheese (4 oz.)
