Sesame Ginger Tempeh Lettuce Wraps
Ingredients
  • subheading: For the sesame ginger sauce:
  • ¼ cup water
  • ¼ cup tamari (I like to use low sodium)
  • 3 tablespoons pure maple syrup
  • 1 tablespoon + 1 teaspoon toasted sesame oil
  • 1 teaspoon fresh grated ginger
  • 1 clove garlic, grated
  • 1 teaspoon cornstarch
  • subheading: For the lettuce wraps:
  • 1 teaspoon olive oil
  • 1 cup shredded carrot
  • 1 cup diced red pepper
  • 1 cup diced snow peas
  • 1 (7 ounce) package tempeh, crumbled
  • 6 to 8 pieces of lettuce that will make a good wrap, such as romaine or butter
  • Optional garnishes: diced cashews, green onions
