Baked Oats with Peach and Cinnamon

Ingredients
  • 2 cups chopped peaches (fresh or frozen)
  • 2 tsp lemon juice
  • 1 tsp cinnamon
  • ¼ tsp black pepper
  •  
  • 1 cup oats
  • ¼ tsp salt
  • ½ tsp cinnamon
  •  
  • ¼ cup water
  •  
  • 2 tsp sugar
Steps
  1. Preheat oven to 400F
  2. Mix the peaches, lemon juice, 1 tsp cinnamon and black pepper in a baking dish and set aside
  3. Mix the oats, salt and cinnamon in a bowl
  4. Pour the oat mixture over the peach mixture and drizzle the ¼ cup water over the oat mixture
  5. Sprinkle the sugar on top
  6. Bake, covered for 30 minutes at 400F
  7. Uncover and bake 15 more minutes to crisp up the top
  8. Remove from oven and allow to cool 15 minutes and serve
