Instant Pot Stuffed Peppers
Ingredients
  • 4 large bell peppers, preferably red, orange and/or yellow (2 to 2 ¼ pounds total)
  • 2 tablespoons olive oil
  • ½ medium yellow onion, diced
  • 4 cloves garlic, minced
  • Kosher salt and freshly ground black pepper
  • 12 ounces lean ground beef (90 percent lean)
  • 2 plum tomatoes (about 8 ounces), cored and diced
  • ¼ cup low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 2 teaspoons fresh thyme leaves
  • 1 ½ cups shredded sharp Cheddar
  • ¾ cup pre-cooked white or brown rice
  • 1 tablespoon chopped fresh parsley
