Jalapeño Cheese Cornbread
Medium cast iron pan, bake in toaster oven

Ingredients
  • 1 tbsp shortening / lard
  • 1 cup all purpose flour
  • 1 cup cornmeal
  • 2 tsp baking powder
  • 1½ tsp salt
  • 1 tbsp sugar
  • 6 tbsp butter
  • 2 eggs
  • 1½ cup mlk
  • 1½ cup shredded cheddar
  • 1¼ cup jalapeño (fresh or pickled)
Steps
  1. Put shortening in pan, and preheat pan & toaster oven to 400°F.
  2. Melt butter. Put jalalpeños in bullet and pulse a few times, or chop well.
  3. Mix everything together, but don't beat/whip it.
  4. Bake at 400°F about 30 minutes, rotating pan at 15 minutes.
