Chicken Enchilada Stuffed Spaghetti Squash (S) P. 132
Ingredients
  • 2 large spaghetti squash
  • 2 Tbsp butter
  • 10 oz frozen large-cut seasoning blend (1- (10 to 12 ounce) bag frozen large cut seasoning blend, see Page 35)
  • 3 Tbsp chili powder
  • 2 tsp cumin (ground cumin)
  • 2 tsp garlic powder
  • 1.5 tsp mineral salt
  • ½ tsp THM Super Sweet Blend (optional, but gives more of an enchilada-sauce taste as most contain sugar)
  • ¼ cup THM Baking Blend (or almond flour)
  • 8 oz tomato sauce (1- (8-ounce) can tomato sauce)
  • 15 oz black beans (1- (15-ounce) can black beans, rinsed and drained)
  • 4 cups chicken (diced cooked chicken; see page 45 for cooking methods)
  • 12 oz cheddar cheese (grated)
