Low-Carb Cauliflower Cream Cheese Soup
(30 Minute Meal!)
Ingredients
  • 2 Tablespoons butter
  • 1 small shallot or ¼ small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups grated cauliflower (about 1 small head of cauliflower)
  • 1 Tablespoon chopped fresh dill
  • ¾ teaspoon seasoned salt (I used Lawry's)
  • pepper
  • 2 Tablespoons water
  • 2 Tablespoons gluten-free or all-purpose flour (see notes for brand used)
  • 1-¾ cups chicken broth, divided
  • 2 cups milk (any kind, I used skim)
  • 8oz Greek yogurt/cream cheese blend or ⅓ less fat cream cheese, softened to room temperature
