Stuffed Peppers

Ingredients
  • 1 Tablespoon olive oil
  • 3 Italian sausage links
  • 1 small onion, cut or chopped
  • ½ lb ground beef
  • ½ small head of broccoli
  • ½ package of sliced mushrooms
  • ½ can of diced, seasoned tomatoes
  • 2 bell peppers
  • ½ package shredded mozzarella
Steps
  1. Preheat the oven to 375° F.
  2. Saute the onion in the olive oil
  3. Add the sausage & ground beef. Continue to stir until beginning to brown.
  4. Steam the broccoli while sauteing.
  5. Stir in broccoli and mushrooms
  6. Continue to cook for a couple of minutes
  7. Add the can of tomatoes and simmer for a few minutes.
  8. Layout on a cookie sheet the pepper halves.
  9. Fill with the mixture and top with mozzarella
  10. Bake until cheese is melted and starting to brown. (about 10 minutes)
