Solomillo Al Whisky (Braised Pork Loin)

  • ½ cup cognac or whisky (substitute chicken broth for whole30, paleo)
  • 1-pound yellow potatoes, peeled and cut into ½-inch cubes
  • 2 ½ cups low-sodium chicken broth
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon paprika
  • 2 tablespoons fresh lemon juice (1 lemon)
  • 1 teaspoon chopped fresh flat-leaf parsley leaves, for garnish
