Ingredients
  • 2 to 3 large, boneless, skinless chicken breasts pounded to even thickness
  • ¼ cup olive oil
  • juice of one lemon
  • 1 tablespoon chopped oregano
  • 1 tablespoon chopped dill
  • 1 teaspoon chopped thyme
  • 2 teaspoons minced garlic
  • salt and pepper to taste
  • 2 cups cooked quinoa or brown rice
  • ½ cup crumbled feta cheese
  • 3 pita breads
  • subheading: Cucumber Salad:
  • 1 cup cherry tomatoes diced
  • 1 peeled cucumber diced
  • 1 tablespoon fresh lemon juice
  • salt and pepper to taste
  • subheading: Tzatziki Dressing:
  • ½ English cucumber peeled and diced
  • 2 cups cold, plain Greek yogurt
  • 4 teaspoons minced garlic
  • ⅓ cup chopped fresh dill
  • juice of ½ lemon
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
