Rich Beef Stock (Or Broth)
Ingredients
  • 5 to 6 pounds beef bones and trimmings
  • 2 medium onions, peeled, quartered
  • 2 large carrots, peeled and cut into 2-inch pieces
  • 2 stalks celery, with leaves, cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 3 ½ quarts  water, divided
  • 1 large bay leaf, or 2 small bay leaves
  • 3 to 4 sprigs fresh parsley
  • ¼ teaspoon dried thyme, or 1 to 2 sprigs fresh thyme
  • ½ teaspoon black peppercorns
