Ingredients
  • 500g ground chicken
  • 12 to 15 cooked prawns, roughly chopped.
  • 1 tablespoon canola or vegetable oil, plus more for frying dumplings
  • 2 tablespoons minced ginger
  • 2 tablespoons minced garlic
  • 1 ½ cups finely chopped Napa cabbage, white and green parts separated (see note)
  • ⅓ cup chopped scallions
  • ½ teaspoon kosher salt
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 32 to 40 round dumpling wrappers, around 3.5" diameter
  • water for cooking the dumplings
  • subheading: Dipping Sauce:
  • ⅓ cup soy sauce
  • ⅓ cup Zhenjiang vinegar, can sub with rice vinegar
  • 1 stalk of scallions, sliced
  • 1 clove garlic, sliced
  • ½- inch piece of ginger, sliced
  • ½ teaspoon sesame oil
