Our Favorite Chili
My Award Winning Chili 09-30-2017

Ingredients
  • 2 pounds ground beef (or turkey)
  • ½ medium yellow onion, diced
  • 1 Rib celery, diced small
  • 1 clove garlic, minced
  • ¼ teaspoon ground cumin
  • 1 Tablespoon chili powder
  • 1 tsp Ancho Chili Powder Seasoning
  • 1 tsp Smoked Paprika
  • 1 teaspoon dry oregano
  • 2 tsp beef bouillon (0 fp)
  • 1 Tablespoon Worcestershire Sauce (1 fp)
  • 2-14 oz cans original (or mild) Ro-Tel diced tomatoes
  • 2-14 ounce cans beans (black and pinto, or any combo, semi-drained. I like one can to be Chili Beans)
  • ¼ to ½ C water to rinse tomato cans
  • 1 T Fish Sauce (0 fp)
Steps
  1. Push the Sauté or Browning button on your Pressure Cooker and allow to heat.
  2. Add oil to the Pressure Cooker cooking pot.
  3. Add ground beef, breaking it up well with a wooden spoon.
  4. Cook until the beef is slightly browned, and then drain fat.
  5. Add onions and celery and sauté for three minutes.
  6. Add garlic, cumin, chili powders, oregano, and paprika.
  7. Cook another minute.
  8. Add Worcestershire Sauce, tomatoes, bouillon, fish sauce, water and beans and stir.
  9. Lock the lid on your Pressure Cooker and close the Pressure Value.
  10. Cook on High Pressure and set the time for 15 minutes.
  11. Allow a 10 minute natural release and then quick release.
  12. Stir in a mixture of water and cornstarch if needed to thicken. Boil 2 minutes. Serve or allow to simmer for a thicker chili. Can put on crockpot setting until ready to serve.

  • 09 to 30-17 Entered in chili cook off at Duck Creek. Won 2nd out of 7 entries!
  • 12-06 to 18 revised recipe and removed 1 tsp brown sugar and 1 tsp cocoa powder.

  • Over time I’ve removed ½ can green chilis and jalapeno because the RoTel tomatoes made the chili plenty spicy for us.

  • 03 to 24-2020 2nd batch during “quarantine”. Reduced cumin to ¼ tsp. Neither of us seem to care for cumin. Maybe I should leave it out?
