Ingredients
  • 2 Tablespoons Olive oil
  • 2 onions, diced
  • 1 tomato, diced
  • 1 cup carrots, diced
  • 2 Zucchini, diced
  • 1 cup celery, diced
  • 8 Cloves Garlic, chopped
  • 2 teaspoon dried Thyme
  • 2 teaspoon Dried basil
  • 2 teaspoon Dried oregano
  • 2 teaspoon Green Goddess Seasoning (optional)
  • 4 Tablespoons Tomato paste
  • 12 Cups Vegetable broth
  • 1 can of white beans
  • 1 can of diced tomatoes
  • 2 cup oat milk
  • 4 to 5 cups greens of choice (spinach, kale, collard greens, etc), chopped
  • ⅓ Cup Vegan Parmesan, I used Violife
  • 18 to 20 Ounces Vegan Tortellini, homemade* or store bought
  • Salt and Pepper to taste
