Ingredients
- 1 ¼ cup granulated sugar
- ¼ cup water
- 1 cup heavy cream
- 1 tablespoon butter
Steps
- Place the sugar and water in a medium-sized heavy bottomed saucepan. Place over medium-high heat. Dip your pastry brush in water and use it to wash away any sugar crystals that may form on the sides of the pan.
- Bring the sugar to a boil without stirring. Continue to boil until the sugar starts to caramelize and turns a lovely golden brown.
- Remove from the heat. Add the cream and whisk to combine. Be careful as you do this as it may spit a little when you add the cream.
- Add the butter and whisk again.
Notes
- This caramel sauce will keep sealed in the refrigerator for up to 3 weeks. You can rewarm it over low heat or in the microwave for serving.
