Caramel Sauce
From 'Butter Celebrates!'

Ingredients
  • 1 ¼ cup granulated sugar
  • ¼ cup water
  • 1 cup heavy cream
  • 1 tablespoon butter
Steps
  1. Place the sugar and water in a medium-sized heavy bottomed saucepan. Place over medium-high heat. Dip your pastry brush in water and use it to wash away any sugar crystals that may form on the sides of the pan.
  2. Bring the sugar to a boil without stirring. Continue to boil until the sugar starts to caramelize and turns a lovely golden brown.
  3. Remove from the heat. Add the cream and whisk to combine. Be careful as you do this as it may spit a little when you add the cream.
  4. Add the butter and whisk again.
Notes
  • This caramel sauce will keep sealed in the refrigerator for up to 3 weeks. You can rewarm it over low heat or in the microwave for serving.
