baingan Salan

  1. Baingan Salan (eggplant salan)
  2. Dry roast peanuts+cahewnuts+white sesame seeds+dry red chillies+whole coriander(dhaniya seeds)+ dessicated coconut. Roast till fragrant.Take care not to burn. Make a thick and fine paste using little water.
  3. Grind onions+ginger+garlic+green chillies into a fine paste.
  4. Wash and dry baby eggplants and slit them in such a way that they are attached at the stem. heat oil in a pan and shallow fry till 95% done.
  5. Heat oil in a pan and add the ground onion paste. Fry till light brown in colour. Add the peanut paste, haldi powder, mirchi powder and salt to taste and cook well till oil separates and the masala is nicely done.
  6. Add the eggplants and mix well with light hands(so that they don't break) and the masala is nicely coated on them. Add water to adjust the consistency of the gravy(should not be very runny) and cover the pan and cook for 5 to 10 min on low flame.
  7. Goes very well with the veg.hyderabadi dum biryani recipe that I have posted earlier or chapatti/pulao/jeera rice
