Ingredients
  • 1 lb (450g) boneless, skin-on chicken thighs (or chicken breasts)
  • ½ yellow onion
  • 2 cups red, yellow, and/or green bell peppers
  • 4 cloves garlic
  • ½ tsp (2g) grated ginger
  • 3 green onions, divided
  • 2 tbsp neutral-tasting oil
  • ½ cup (75g) unsalted raw (or roasted) cashews
  • 3 to 4 cups hot cooked rice, to serve
  • subheading: Marinade:
  • ½ tbsp soy sauce
  • ½ tbsp Shaoxing wine (or mirin, dry sherry, water, etc.)
  • ¼ tsp white pepper (or black pepper)
  • ½ tsp baking soda
  • 1 tbsp cornstarch
  • 1 tbsp neutral oil (such as grape seed, canola, vegetable oil, etc.)
  • subheading: Stir Fry Sauce:
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • ½ tsp dark soy sauce (optional), for color
  • 1 tbsp sugar
  • ¼ tsp white pepper (or black pepper)
  • 1 tsp toasted sesame oil
  • 4 tbsp water
  • 1 tbsp cornstarch
  • 1 tbsp chicken bouillon powder (or a mix of golden mountain sauce and fish sauce)
