Veg Paella
Ingredients
  • Large red onion
  • Large leek
  • Large red capsicum
  • 1 cup mushrooms
  • 1 clove garlic
  • ¼ tsp fennel seeds
  • 1 cup brown basmati rice
  • 3 cups veg stock
  • ⅓ cup red wine
  • 2 tbsp fresh parsley
  • ½ tsp paprika
  • Pinch saffron
  • ¼ cup fresh coriander
Steps
  1. Saute onion and leek til soft
  2. Add capsicum, mushrooms, garlic and cook 6 min
  3. Add fennel, rice, veg stock and wine, bring to boil
  4. Lower heat and simmer til liquid absorbed - 15 to 18 min
  5. Add parsley, paprika, saffron and coriander
  6. Turn off heat, cover pan and leave for 5 min
