Hearty, Fluffy Gluten Free Oat Bread
Ingredients
  • Cook Time: 1 hour
  • 1 ⅜ cups ( 193 g) all purpose gluten free flour blend (I used Better Batter; please click thru for full info on appropriate blends)
  • ¾ teaspoon xanthan gum (omit if your blend already contains it)
  • ⅜ cup ( 54 g) cornstarch
  • ⅝ cup ( 75 g) certified gluten free oat flour (See Recipe Notes)
  • 2 teaspoons baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¾ cup ( 150 g) granulated sugar
  • ½ cup ( 50 g) certified gluten free old fashioned rolled oats
  • 1 cup ( 8 fluid ounces) buttermilk at room temperature
  • 6 tablespoons ( 84 g) unsalted butter melted and cooled
  • 2 ( 100 g (weighed out of shell)) eggs at room temperature, beaten
