Protein Oatmeal Breakfast Cake
Ingredients
  • 2 cups dry (old-fashioned) gluten free organic rolled oats ( I use Nature’s Path)
  • 4 to 5 servings (120 to 150g) vanilla protein powder (grass fed whey, grass fed bone broth, collagen peptides)
  • 4 Tbsp Swerve granulated erythritol sweetener (or to taste)
  • 1 tsp baking powder
  • dash of Himalayan se salt
  • 1 medium banana (½ cup mashed/60g total weight)  ½ cup canned pumpkin OR unsweetened applesauce
  • ½ cup nonfat plain coconut or greek yogurt
  • 1 tsp pure vanilla extract
  • 1 cup unsweetened almond milk
  • 1 whole egg (pasture raised)
  • 2 egg whites
  • subheading: Optional Ingredients:
  • ½ cup berries (fresh or frozen)
  • Cinnamon
  •  
  • note: *Feel free to omit the yogurt and use all banana, or even applesauce, pumpkin, etc. Do keep in the mind the protein/carb ratio will change.**
