Parmesan-Crusted Talapia

Parmesan is an excellent crusting cheese that can substitute for bread crumbs in many recipes. For this tilapia, the Parmesan gets an added boost from almond flour, allowing it to bind to the fish more easily and stay put while it cooks. With a side of sautéed spinach, this is a heart-healthy meal that’s great for any weeknight.

Ingredients
  • ½ cup grated Parmesan cheese
  • 2 tablespoons almond flour
  • 1 teaspoon paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper
  • 2 tilapia fillets
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley
Steps
  1. Preheat the oven to 400°F.
  2. In a medium bowl, mix together the Parmesan cheese, almond flour, paprika, salt, and pepper.
  3. Place the tilapia fillets on a plate and drizzle with 1 tablespoon of olive oil. Massage the oil into the fish, and then dredge them in the Parmesan mix, coating thoroughly.
  4. Line a baking dish with aluminum foil. Place the fillets inside. Put the dish in the preheated oven and bake for 10 to 15 minutes, depending on the thickness of the fillets.
  5. While the fillets cook, add the remaining tablespoon of olive oil to a large skillet and heat over medium-high heat.
  6. Remove the baking dish from the oven. Check the fillets for doneness.
