Lima Beans and Ham Soup
Perfect comfort food using leftover ham
Ingredients
  • 1 lb lima beans
  • Ham hock, or a few slices of leftover holiday ham
  • 1 chopped onion
  • 1 to 2 garlic cloves, chopped
  • 8 cups of liquid (broth plus water)
  • Bay leaf
  • Salt/pepper
  • Kale, chopped (optional)
Steps
  1. Set IP to sautee. Add oil when hot and sautee the chopped onion and garlic until soft.
  2. Add the rinsed beans. liquid, ham (added it frozen, several slices together), bay leaf, salt and pepper.
  3. Set IP for MANUAL 25 minutes, lock the lid.
  4. Allow for 10 minutes NPR.
  5. Add chopped kale, adjust seasonings. Close lid for a couple of minutes.
Notes
  • Yummy! The kale really brightened it.
