Butternut Squash Sausage Gnocchi
Ingredients
  • 1 small butternut squash peeled, seeded and cut into ½-inch cubes (about 2 cups)

  • Kosher salt and black pepper to taste
  • 1 lb DeLallo Potato Gnocchi mini or regular
  • ⅓ cup diced red onion
  • 8 oz loose Italian sausage
  • 3 cups finely chopped kale ribs removed
  • 3 cloves garlic minced
  • 1 teaspoon finely chopped fresh rosemary
  • ⅓ cup dried cranberries
  • ⅓ cup grated Parmigiano Reggiano
