Sweet & Spicy Shrimp with Pineapple
Ingredients
  • 1 spray(s) cooking spray
  • ½ large sweet red pepper(s), thinly sliced
  • 5 oz uncooked shrimp, peeled (31 to 40 per lb size)
  • 2 medium uncooked scallion(s), sliced
  • ¾ cup(s) pineapple, fresh golden, chunks
  • 1 Tbsp Sweet Thai chili sauce
  • ½ tsp Sriracha hot sauce
  • ½ tsp low sodium soy sauce
  • ½ cup(s) long grain cooked brown rice
  • Notes Coat a medium nonstick skillet with cooking spray; heat over medium-high heat. Add pepper; saute until crisp-tender, 5 minutes.Stir in shrimp and scallions; saute until shrimp are cooked through, 2 minutes. Stir in remaining ingredients, except rice, and toss until pineapple is hot; serve over rice.
