Ingredients
- 3 large boneless skinless chicken breasts
- 1 cup diced onion
- 2 cups chopped celery
- 2 cups chopped carrots
- 1 medium potato, peeled & chopped
- 6 cloves garlic, diced
- 2 tbsp butter
- 3 tbsp flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried dill
- 1 tsp poultry seasoning
- 5 cups chicken broth
- 1 cup heavy cream
- subheading: Dumplings:
- 1 cup flour
- 2 tsp baking powder
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
- 1 tbsp butter
- ½ cup buttermilk
Steps
- subheading: Dumplings:
- Add dry ingredients to bowl & whisk together.
- Cut in butter with pastry cutter or fork until crumbly.
- Add buttermilk & blend together to form a dough.
- Form dough into small round balls/globs (I made 20).
- Set aside.
- Set Instant Pot on Saute.
- When hot add butter, onions, celery & carrots.
- Saute until softened (5 to 7 minutes).
- Add garlic & saute another minute.
- Add flour & saute 1 minute while stirring.
- Press Cancel to turn off pot.
- Add broth & scrape off anything stuck to bottom of pot.
- Add chicken.
- Cook on Manual/Pressure Cook (High Pressure) 10 mins;
- 10 minute Natural Pressure Release.
- Remove chicken, shred & return to pot.
- Add potatoes.
- Drop dumplings on top of broth.
- Cook on Manual/Pressure Cook (High Pressure) for 5 mins;
- 5 minute Natural Pressure Release.
- Remove lid, gently stir in heavy cream.
Notes
- -Made in a 6qt Instant Pot.
- -I used homemade broth. If using canned broth or bouillon you may want to add less salt.
- -If you want peas in yours add them in after pressure cooking when you add the heavy cream.
