Malaysia's Take On Semolina Cake
Ingredients
  • ¾ cups plus 2 tablespoons semolina flour
  • 2 sticks butter, softened at room temperature
  • ¾ cups sugar, separated into three equal portions, ¼ cup each
  • 8 egg yolks
  • 4 egg whites
  • ½ teaspoon salt
  • 1 tablespoon brandy or cognac
  • ¾ cups ground almonds, or for a more rustic feel, substitute with roughly chopped/crushed almonds
  • ¼ cup all-purpose flour
  • ½ tablespoon baking powder
