Buckwheat Flour Carrot Muffins (Vegan, Oil-Free, Gf)
Ingredients
  • 2 cups light-colored buckwheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 2 teaspoons pumpkin pie spice or ground cinnamon
  • ⅓ cup  coconut sugar (or use brown sugar)
  • ¼ cup smooth nut butter (I used almond butter)
  • 1 cup unsweetened applesauce
  • 1 tablespoon cider vinegar (or other light-colored vinegar)
  • 1 and ¼ cups shredded carrots
  • Optional: ½ cup raisins (or use dairy-free chocolate chips!)
