Quinoa Pilaf with Vegetables
Ingredients

  • 1 cup ( 180 g) quinoa
  • 1 ¾ cups ( 420 ml) water or vegetable broth
  • ¾ to 1 tsp sea salt (use less if using broth)
  • ⅓ tsp ground turmeric

  • 1 tbsp oil
  • ½ tsp cumin seeds
  • 1 red chili minced (omit if sensitive to heat)
  • 1 medium onion diced
  • 2 garlic cloves minced
  • ½ tbsp fresh ginger grated
  • 1 cup ( 120 g) peas frozen & thawed
  • ½ cup ( 80 g) sweet potato finely diced (*see notes)
  • ½ cup ( 75 g) bell pepper chopped
  • 1 bay leaf
  • Sea salt and black pepper to taste (I used ½ tsp salt)
  • ¼ cup ( 60 ml) vegetable broth
  • Juice from ½ lemon or lime
