The Best Tuna Patties
Ingredients
  • 2 cans (5 oz) of tuna in water, drained (I prefer wild-caught albacore)
  • 2 eggs (local and/or pastured eggs taste the best!)
  • ½ a yellow onion, diced
  • ¼ cup of green onion, thinly sliced
  • 1 lemon (zest juice)
  • 2 to 3 teaspoons of mustard (I prefer spicy brown)
  • 1 tablespoon of Cajun seasoning
  • Sea salt, to taste (I love THIS or THIS)
  • Black pepper, to taste
  • ½ cup of panko bread crumbs* (OR coconut flour,  homemade almond meal/ almond flour, gluten-free all-purpose flour, gluten-free panko bread crumbs, regular breadcrumbs, etc.)
  • 1 to 2 tablespoons of cooking oil (I typically use coconut oil, avocado oil or olive oil)
  • subheading: For Garnish (optional):
  • 1 to 2 lemons, cut into wedges (for squeezing on top of the patties)
  • homemade dipping sauce (like aioli or remoulade)
