Egg-In-A-Hole Fried Quinoa
Ingredients
  • 3 tablespoons peanut or canola oil, divided
  • 3 scallions, thinly sliced, plus more for serving
  • 1 tablespoon minced fresh garlic
  • 1 tablespoon minced fresh ginger
  • 2 cups green beans, trimmed and cut into ½-inch pieces
  • 1 small yellow squash, diced
  • 1 small zucchini, diced
  • 2 cups cold cooked quinoa (see Tip)
  • 3 tablespoons oyster sauce, preferably vegetarian
  • 4 large eggs
  • 1 tablespoon toasted sesame oil
