Farro and Roasted Squash Pilaf
Ingredients
  • 1 c. dried cranberries
  • 1 butternut squash (about 2 pounds), peeled and cut into ¾-inch cubes (about 5 cups)
  • 3½ T. extra-virgin olive oil
  • 2 tsp. fresh lemon juice
  • Salt
  • Pepper
  • 1½ c. farro
  • ⅔ c. raw pumpkin seeds
  • ¾ c. thinly sliced scallions
  • 2 T. fresh thyme leaves, chopped
