Chicken Cheese Enchiladas
Ingredients
  • 2 to 3 chicken breast
  • 1 big can of enchilada sauce
  • 10 tortillas
  • cheese
Steps
  1. bake chicken at 375 on a foil-lined baking sheet for 30 to 45 min (until temp reaches 175 in middle) then shred it, or buy canned chicken.
  2. combine shredded chicken, a little bit of cheese, and a little bit of sauce in a Bowl.
  3. Cover a long casserole or cake pan with foil and pour quite a bit of sauce on the bottom.
  4. Dip 1 tortilla at a time in sauce on both sides in casserole dish. Put chicken cheese filler in it and roll it up and push to side of in casserole dish. Repeat until all tortilla is used adding sauce as needed.
  5. Poor the rest of sauce over enchiladas. If there is a lot left I only poor enough to cover enchiladas.
  6. Bake at 375 for 15 min
  7. Top with cheese and bake at 400 for 5 min
  8. Top with sour cream and serve with salad or rice
