Vegetarian Stuffed Acorn Squash Recipe with Cornbread Stuffing
Made for my one vegatarian friend for friends giving. Any stuffing you don’t want to put in the squash put in the oven in cake/brownie pan and cover with tin foil for the temp and time of the squash!
Ingredients
  • 3 large acorn squash
  • 2 tablespoons margarine, softened
  • 2 tablespoons olive oil
  • 1 medium onion, minced
  • 2 stalks celery, diced
  • 2 medium apples, coarsely chopped
  • ¼ cup maple syrup
  • ½ cup raisins
  • ¼ teaspoon parsley
  • ½ teaspoon dried sage
  • ½ teaspoon rosemary
  • ½ teaspoon thyme
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 package store-bought vegan cornbread stuffing mix
