I Am Victorious Roasted Vegetable & Quinoa Salad
Ingredients
  • 1 large red bell pepper, sliced
  • 1 small red onion, sliced
  • 1 Japanese eggplant, cut into small cubes
  • 1 cup quinoa (any variety)
  • 2.5 cups chicken, or vegetable stock
  • 3 to 4 cloves of garlic, diced
  • 2 tbsp olive oil
  • Sea salt & pepper to taste
  • 2 cups arugula
  • Optional: juice of ½ lemon
