Creamy Roasted Red Pepper Tomato Pasta (WIP)
Ingredients
  • 1 pound whole wheat pasta
  • ½ cup chopped sun-dried tomatoes in oil
  • ½ cup chopped yellow onion
  • 1 tablespoon minced garlic (~1 large clove)
  • 12 ounce jar roasted red peppers, drained, rinsed, and roughly chopped
  • 1 teaspoon fresh chopped rosemary (or ⅓ teaspoon dried rosemary) (optional)
  • ½ cup no-salt added chickpeas, drained and rinsed
  • 1 cup part-skim ricotta cheese (substitute low-fat cottage cheese)
  • ½ teaspoon Kosher salt
  • Freshly ground pepper
