Seafood Salad with White Beans and Bruscetta

Ingredients
  • 500 gms cleaned shrimp
  • 500 grams cleaned calamari cut in rings plus heads
  • 1 kilo cleaned mussels
  • 2 cups of soaked white beans
  • 2 finely chopped red onions
  • 1 bunch of parsley roughly chopped
  • 5 to 6 cloves of garlic thinly sliced
  • 1 hot pepper finely chopped
  • 1 tbsp smoked paprika
  • olive oil salt and pepper
  • baguette
  • 2 tomatoes
  • 1 clove garlic
  • olive oil, salt and pepper
Steps
  1. 1. Cook the beans in boiling water until al dente
  2. add salt to the water about ten minutes before done, drain, cool
  3. 2. Prepare bruscetta...toast bread, make emulsion of last three ingredients Toast the bread with a bit of olive oil about ten min in oven.
  4. 3. Prepare a large bowl of ice water.....and a large pot of boiling water. cook the shrimps for about two minutes, plunge into ice water. continue with the calamari 2 minutes, plunge in ice water, then the mussels until opened, ice water. Shell the mussels.
  5. 4. Drain all the seafood. combine all the ingredients in a large bowl.
  6. 5. Serve on the toasted bruschetta and tomato.
